Our recommendation
For a conference, favour continuous-volume structures (arched tent, marquee, large-span structure) that offer a good view of the stage. Avoid pagoda tents or structures with central poles that can block the view.
Worth keeping in mind
Acoustics are the number-one issue: plan a pro sound system (headset/lapel mic + room radio mics), question feedback, and possibly an audio loop. PVC canvas absorbs little — anticipate fabric lining if there is a problem.
